Our Leaf lard from the inside of the pig, near the kidneys, and our "pork fat" (also known as back fat or fatback) is from outside of the pig, just under the skin. Unless you're making fine delicate pastries with it the "pork fat" will be what you want.
Both kinds are unprocessed, unrendered, pastured pork beyond organic lard. We've also written a great article for you on how to render lard once it arrives on your doorstep.
TOP SECRET STUFF: We'd like to let you in on a little secret. That $19 fee that we charge to ship orders under $199 doesn't actually cover the entire cost of shipping (labor, cooler, dry ice, FedEx fees, etc). The actual shipping cost for us is more like $30+ most of the time. This means that on really small orders, we actually lose money. Yeah, we know that sounds bad. But we also know that people who order a little will often come back and order a lot. The problem is that we started to notice lots and lots and lots of orders coming in with just one pack of pork fat or leaf lard. So many, in fact, that all of those $30 or $40 orders were having a measurable (and bad) impact on us. So, our solution to this challenge is two-fold:
1.) In the short run, we have made a minimum order quantity for our pork fat and leaf lard of 3 units. This allows us to keep our prices the same and avoid losing money.
2.) In the long run (maybe this summer), we will start offering already-rendered pastured pork lard and pastured pork leaf lard! By rendering it for you, we'll be able to offer a ready-to-use, creamy white, and relatively shelf-stable product that we will be able to ship without a cooler or dry ice. So, before long, you be able to get already rendered pastured pork lard from us without having to pay hardly any shipping at all! In the meantime, thanks for your patience and understanding.
